Rye soda bread

Boost your bread's nutrition with rye flour rich in phosphorus and oats for added fiber. A winning combination for a wholesome loaf.
Ingredients:
  • 250 g wholemeal flour plus extra for dusting
  • 100 g rye flour
  • 50 g porridge oats
  • 1 teaspoon bicarbonate of soda
  • 1 large free-range egg
  • 1 x 300ml tub of buttermilk or natural yoghurt
Instructions:
  • Preheat your oven to 190°C/375°F/gas 5. Combine both flours, oats, bicarbonate of soda, and 1 tsp sea salt in a large bowl. In a separate bowl, whisk the egg and buttermilk/yogurt, then mix into the flour. Use your hands to gently shape the dough into a round ball, place on a baking tray, flatten into a disc, and score the top. Bake for 40-45 minutes until golden and crusty. Cool on a wire rack and enjoy warm with your favorite toppings.
