Irish soda bread muffins with plump raisins and caraway seeds, perfect for breakfast with butter and jam.
Ingredients:
  • 3 cups all-purpose flour
  • 1 cup raisins
  • 0.5 cup white sugar
  • 2 tablespoons white sugar
  • 1 tablespoon caraway seeds
  • 1 tablespoon baking powder
  • 1 teaspoon salt
  • 0.25 teaspoon baking soda
  • 1.75 cups buttermilk
  • 0.25 cup butter, melted
Instructions:
  • Preheat the oven to 400°F (200°C) while preparing a muffin tin with paper liners.
  • Combine the flour, raisins, 1/2 cup plus 2 tablespoons of sugar, caraway seeds, baking powder, salt, and baking soda in a large bowl.
  • In a small bowl, gently whisk together the buttermilk and egg. Combine this mixture with the flour. Gently fold in the butter to create the batter.
  • Fill the muffin tin with the batter using a spoon.
  • Bake in the preheated oven for 20 to 30 minutes, or until a toothpick inserted in the center comes out clean.
