Irish soda bread with buttermilk, sour cream, caraway seeds, and raisins. Serve warm with butter.
Ingredients:
  • 0.5 cup white sugar
  • 4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 0.75 teaspoon salt
  • 3 cups raisins
  • 1 tablespoon caraway seeds
  • 2 eggs, lightly beaten
  • 1.25 cups buttermilk
  • 1 cup sour cream
Instructions:
  • Preheat the oven to 350 degrees F (175 degrees C) and generously grease a 9-inch round cast iron skillet or baking pan.
  • In a large bowl, mix together flour (setting aside 1 tablespoon), sugar, baking powder, baking soda, salt, raisins, and caraway seeds.
  • Combine eggs, buttermilk, and sour cream in a small bowl, then mix into the flour mixture until just moistened. Gently knead the dough in the bowl 10 to 12 times until sticky. Transfer the dough to the skillet or pan, pat it down, make a 4x¾ inch deep slit on top, and dust with reserved flour.
  • Bake in a preheated oven for 65-75 minutes until golden brown. Allow the bread to cool, then gently invert onto a wire rack.
