Ingredients:
  • 2 cups all-purpose flour
  • 2 cups whole wheat pastry flour
  • 0.75 cup rolled oats
  • 2 tablespoons white sugar
  • 1.5 tablespoons baking powder
  • 0.75 teaspoon baking soda
  • 2 teaspoons kosher salt
  • 2 cups buttermilk
  • 6 tablespoons unsalted butter, melted
Instructions:
  • Preheat your oven to 375 degrees F (191 degrees C) and prepare a cookie sheet by lining it with parchment paper.
  • Combine flours, rolled oats, sugar, baking powder, baking soda, and salt in a medium bowl. In a separate small bowl, mix together buttermilk and melted butter.
  • Create a cozy spot in the flour mixture and pour in the delightful buttermilk-butter blend. Mix gently with a wooden spoon until fully incorporated.
  • Transfer the dough onto a well-floured surface and shape into a smooth, round loaf. Then place it on the cookie sheet and score a shallow X on the top of the loaf.
  • Bake in the preheated oven for about 1 hour, or until the top is golden brown. Check the doneness by tapping the bottom of the loaf; it should sound hollow. Allow to cool on a baking rack for at least 30 minutes before slicing.
