Irish soda bread flavors in quick, easy soda cookies!
Ingredients:
  • 0.5 teaspoon baking soda
  • 0.5 cup butter
  • 0.5 cup dried currants
  • 1 egg
  • 0.25 teaspoon salt
  • 1 teaspoon caraway seed
Instructions:
  • Preheat the oven to a toasty 350 degrees F (175 degrees C) and prepare two baking sheets by lining them with parchment paper.
  • In a mixing bowl, blend flour, sugar, baking soda, salt, and caraway. Use a pastry blender to incorporate butter until the mixture is crumbly. Gently fold in currants.
  • Combine the beaten egg with buttermilk until a soft dough forms, adding a touch more buttermilk if needed.
  • Flatten and shape dough on a floured surface, gently knead 5 or 6 times. Roll it out to 1/4 inch thickness and cut into squares and triangles. Transfer cookies to baking sheets.
  • Bake until golden brown, about 12-14 minutes.
