Spiced soda bread

Classic New England biscuits, no yeast needed. Best enjoyed fresh and warm.
Ingredients:
  • 600g (4 cups) plain flour
  • 5.00 gm bicarbonate of soda
  • 2.40 gm salt
  • 30.00 ml caraway seeds (see note)
  • 60g butter, at room temperature
  • 500ml (2 cups) milk
  • 1 tsp white wine vinegar
  • Butter, to serve
Instructions:
  • Preheat the oven to 200°C. In a bowl, mix flour, bicarbonate of soda, salt, and 1 tablespoon of caraway seeds. Incorporate the butter until the mixture resembles fine breadcrumbs.
  • Create a well in the center of the flour mixture. Pour the milk and vinegar into the well, then use a round-bladed knife to mix until the dough begins to come together. Use your hands to gently form the dough in the bowl. Transfer the dough onto a lightly floured surface and shape it into a ball. Roll into a 40cm-long log, and cut it into 8 equal portions.
  • Form each dough portion into a ball and set on a large baking tray. Score a cross into the top of each ball with a sharp knife, sprinkle with the leftover caraway seeds. Bake for 25 minutes until the bread is golden and sounds hollow when tapped. Serve warm with butter.
