Quick and easy soda bread recipe with oats and buttermilk for fresh homemade bread in under an hour.
Ingredients:
  • 225g (1 1/2 cups) plain flour, plus extra, to dust
  • 225g (1 1/2 cups) plain wholemeal flour
  • 90g (1 cup) rolled oats
  • 2.50 gm bicarbonate of soda
  • 2.40 gm sea salt flakes
  • 40g butter, chilled, chopped
  • 435ml (1 3/4 cups) buttermilk
Instructions:
  • Preheat your oven to a toasty 200C/180C fan forced and lightly dust a baking tray with extra flour.
  • In a bowl, mix plain and wholemeal flour, oats, bicarb, and salt. Add butter and rub with fingertips until it forms fine crumbs. Create a well in the center, pour in buttermilk, and stir with a flat-bladed knife until a soft dough forms. On a floured surface, shape the dough into a ball using floured hands. Place the ball on a prepared tray and flatten it into a 20cm round. Dust the top with a bit of extra flour and cut a deep cross into the dough round.
  • Bake at 350°F for 35 minutes, or until the bottom sounds hollow when tapped. Remove from oven and cool on a wire rack. Serve deliciously warm or at a cozy room temperature.
