Ingredients:
  • 250 g wholemeal flour
  • 100 g plain flour plus extra for dusting
  • 50 g pinhead oatmeal
  • 1 teaspoon bicarbonate of soda
  • 1 teaspoon sugar
  • 1 large free-range egg
  • 1 x 300 ml tub buttermilk

  • 1. Preheat the oven to 190°C/375°F/gas 5. Combine flours, oatmeal, bicarbonate of soda, sugar, and 1 teaspoon of sea salt in a large bowl. In a separate bowl, whisk together the egg and buttermilk. Mix the egg mixture into the flour until a dough forms. Shape into a ball, place on a lightly floured baking tray, and flatten into a 6 to 7cm disk. Score a cross on top of the dough and bake for 50 to 60 minutes until crusty and hollow-sounding.
