Irish brown bread with two flours, oats - rich, nutty flavor. Perfect for breakfast or soup.
Ingredients:
  • 1 cup all-purpose flour
  • 2 tablespoons white sugar
  • 1 teaspoon baking powder
  • 1.5 tablespoons butter
  • 2 cups whole wheat flour
  • 0.25 cup quick-cooking oatmeal
  • 1.5 cups nonfat plain yogurt
  • 1 teaspoon milk, or more as needed
Instructions:
  • Preheat the oven to 375°F (190°C) and lightly grease a baking sheet.
  • Combine all-purpose flour, sugar, baking powder, baking soda, and salt in a large bowl. Use a pastry blender or 2 knives to cut in butter until mixture forms fine crumbs. Mix in whole wheat flour and quick-cooking oatmeal until combined. Gently incorporate yogurt. If dough is too dry, gradually add milk until it holds together without being overly sticky.
  • Transfer the dough onto a dusted work surface; knead softly around 5 times to create a round shape. Put the dough on the baking sheet and slash a big 'X' on the surface of the loaf.
  • Place in the oven and bake until golden brown, approximately 40 minutes. Then, allow it to cool on a wire rack. Serve the bread warm or cold.
