Flaky Irish Cheddar biscuits with buttermilk, green onions, and layered cheese folded into the dough by Chef John.
Ingredients:
  • 2 cups self-rising flour, plus more for kneading
  • 7 tablespoons very cold butter, cut into pieces
  • 0.75 cup buttermilk, plus additional for brushing
  • 0.5 cup shredded Irish Cheddar cheese, divided, plus more for topping
  • 0.25 cup sliced green onions, divided
Instructions:
  • Preheat your oven to 400 degrees F (200 degrees C) and prepare a baking sheet by lining it with parchment paper.
  • Combine self-rising flour and baking soda in a large bowl. Incorporate cold butter using a pastry blender until mixture looks like coarse crumbs, about 5 to 7 minutes. Create a well in the center and pour in buttermilk. Gently stir with a fork until dough starts to come together.
  • Place the dough on a floured surface and shape it into a rectangle. Fold it into thirds using a bench scraper, then shape it back into a rectangle, adding more flour if needed. Roll the dough into a 1/2-inch thick rectangle using a rolling pin.
  • Sprinkle 1/4 cup cheese and 1/8 cup green onions over the dough, then fold into thirds. If needed, dust with flour and roll to 1/2-inch thickness. Top with the remaining 1/4 cup cheese and 1/8 cup green onions, fold into thirds, and roll to 1/2-inch thickness. Cut out 12 biscuits using a 2- or 3-inch round cutter.
  • Place the biscuits on the baking sheet, lightly brush with buttermilk, and sprinkle with 1 teaspoon of cheese on top.
  • Bake in the preheated oven for around 20 minutes until golden brown and fully cooked. Then, cool on a wire rack.
