Irish Chicken Nachos

Irish twist on nachos: Waffle fries topped with chicken, cheddar cheese, jalapeños. Serve with salsa and sour cream.
Ingredients:
  • 1 bag (22 oz) frozen waffle fries
  • 2 cups shredded Cheddar cheese (8 oz)
  • 1 cup shredded cooked chicken
  • 5 slices bacon, crisply cooked
  • 1/4 cup sliced green onions (4 medium)
  • 2 jalapeño chiles, sliced
  • Thick & chunky salsa
  • Sour cream
Instructions:
  • Preheat oven to 450°F and lay out waffle fries on a nonstick baking sheet.
  • Bake for 20 minutes, then take out of the oven.
  • Place the waffle fries on a baking sheet lined with parchment paper. Sprinkle 1 cup of cheese over the fries, followed by the chicken, the remaining cup of cheese, the bacon, and the chiles. Preheat the oven to broil.
  • Broil for 2 minutes until the cheese is gooey and bubbly. Enjoy warm with a dollop of zesty salsa and creamy sour cream on top.
