Hearty Irish potato soup with smoky bacon and veggies for a rich winter treat.
Ingredients:
  • 1 (1 pound) package bacon
  • 1 onion, chopped
  • 1 cup celery, chopped
  • 6 potatoes, scrubbed and cubed
  • salt and pepper to taste
  • 2 (12 fluid ounce) cans evaporated milk
Instructions:
  • Fry bacon in a deep skillet over medium-high heat, turning occasionally, until crispy and browned all over, approximately 10 minutes. Drain on paper towels, crumble, and set aside.
  • In the remaining bacon grease, sauté onion and celery until soft and translucent. Remove excess grease, then mix in potatoes. Add enough water to cover all but 1 inch of the potatoes. Bring to a boil, then lower the heat and simmer until the potatoes are tender, approximately 15 minutes, stirring occasionally.
  • Add evaporated milk and cook until warmed. Season with salt and pepper, then stir in bacon just before serving.
