Irish potato and cabbage soup with crispy bacon and tomatoes - a comforting winter dish bursting with flavor and nutrients.
Ingredients:
  • 0.5 pound Irish bacon, diced
  • 2 large potatoes, peeled and cubed
  • 1 (15 ounce) can diced tomatoes with juice
  • 1 cup chicken stock, or as needed
  • Salt and black pepper to taste
  • 2 cups thinly sliced dark green Savoy cabbage leaves
Instructions:
  • In a large pot over medium-high heat, sizzle the bacon until beautifully browned. Discard any extra fat.
  • Add the potatoes and tomatoes into the pot, pour in the perfect amount of chicken stock to cover everything, and season with a good pinch of salt and pepper. Bring the mixture to a lively boil, then lower the heat and allow it to gently simmer for 20 minutes, or until the potatoes are perfectly tender.
  • Mix in the cabbage and let the soup simmer a bit more before it's ready to be served.
