Chewy almond paste cookies with nutty topping.
Ingredients:
  • 16 ounces almond paste
  • 6 egg whites
  • 1 cup white sugar
  • 1 cup confectioners' sugar
  • 0.5 cup sifted all-purpose flour
  • 0.25 teaspoon salt
  • 2 teaspoons lemon extract
  • 3 drops red food coloring
  • 0.5 cup slivered almonds
Instructions:
  • Preheat your oven to a toasty 300 degrees F (150 degrees C) while you generously line your cookie sheets with parchment paper.
  • Combine almond paste, egg whites, and lemon extract in a bowl until smooth. Sift white sugar and confectioners' sugar, then mix with flour, salt, and food coloring. Stir in dry ingredients into the wet mixture. Drop by teaspoonfuls onto cookie sheets. Top each cookie with nuts before baking.
  • Bake the cookies in the preheated oven for 25 to 30 minutes until golden around the edges. Allow them to cool briefly on the baking sheets before transferring to wire racks for complete cooling. Store in an airtight container or freeze for later.
