Savory bacon and Italian sausage casserole with cabbage and apples - a year-round favorite!
Ingredients:
  • 3 slices bacon, diced
  • 1 pound bulk mild Italian sausage
  • 1 (14 ounce) can beef broth
  • 2 cups diced celery
  • 1 white onion, diced
  • 5 ounces shredded carrots
  • 2 tablespoons Italian seasoning
  • 2 teaspoons ground coriander
  • 1.5 teaspoons garlic, minced
  • 1 teaspoon ground black pepper
  • 0.5 teaspoon coarse sea salt
  • 1 head cabbage, shredded
  • 1 sweet apple, diced
Instructions:
  • Sizzle bacon in a Dutch oven on medium heat until golden and crispy, for 5 to 10 minutes. Place bacon on paper towels to drain grease from the pot.
  • Brown and crumble Italian sausage in a Dutch oven. Add beef broth and bring to a boil, scraping off the flavorful bits from the bottom of the pan with a wooden spoon.
  • Combine celery, onion, carrot, Italian seasoning, coriander, garlic, black pepper, and sea salt with beef broth in a pot. Simmer until veggies are tender and liquid reduces, about 15-20 minutes. Add cabbage, apple, and bacon, and cook until desired tenderness, 30-45 minutes.
