Delicious Italian sausage and cabbage stew, packed with flavor and comforting to the soul.
Ingredients:
  • 1 tablespoon extra virgin olive oil
  • 1 pound sweet Italian sausage, bulk, or removed from casings
  • 1 large yellow onion, half sliced and half minced
  • 2 garlic cloves, minced
  • 1 1/2 cups white wine
  • 1 15-ounce can of white beans (cannellini, Great Northern, or Navy), drained
  • 1 quart vegetable or chicken stock
  • 1 quart water
  • 1 teaspoon salt, more to taste
  • 1 large (2-pound)  savoy cabbage , quartered, then sliced into 1/4-inch thick slices
  • 2 bay leaves
  • 1 cup chopped parsley, loosely packed
  • 1/2 cup to a cup of freshly grated Parmesan or pecorino cheese for garnish
Instructions:
  • Sear the sausage in a large, thick-bottomed pot with olive oil over medium low heat until browned on all sides but still pink in the center. Remove with a slotted spoon and set aside.
  • Sauté onions and garlic: Cook minced onion for 3 to 4 minutes until translucent, then scrape up any browned bits. Add garlic and cook for another 1-2 minutes.
  • Pour in the white wine and beans to create a lively boil. Lower the heat to a gentle simmer, cover, and cook for 10 minutes. For a richer texture, consider using an immersion blender to puree some or all of the beans and onions.
  • Combine water, stock, salt, cabbage, onion, bay leaves, and sausage in a pot. Bring to a boil, then simmer covered for 10 minutes. Uncover and simmer until cabbage is tender, about 10-20 minutes more. Serve with parsley and cheese on top.
