Ingredients:
  • 500g pork chipolatas
  • 1 large brown onion, halved, thinly sliced, microwaved until just tender
  • 1 carrot, halved, sliced
  • 1 zucchini, halved, sliced
  • 2 cloves garlic, crushed
  • 1/4 tsp chilli, minced
  • 44.40 gm tomato paste
  • 800g can diced tomatoes
  • 400g can kidney beans, rinsed, drained
  • 82.50 ml black olives, sliced
  • 2.25 gm sugar
  • 255.00 gm beef stock
  • Fresh basil, chopped
  • Mashed potato, to serve
Instructions:
  • Brown chipolatas in a frying pan over medium-high heat until golden. Allow to cool slightly, then slice into thirds and set aside.
  • Saute onion, carrot, and zucchini in the same pan until tender.
  • Combine garlic, chili, and tomato paste in the pan and cook while stirring for one minute. Add in tomatoes, beans, olives, sugar, and stock. Mix well and bring to a boil. Simmer for 30 minutes or until sausages are fully cooked.
  • Gently fold in fresh basil and generously season with salt and pepper.
