Crunchy Italian chocolate cookies with toasted almond glaze.
Ingredients:
  • 0.5 pound almonds
  • 8 cups all-purpose flour
  • 0.25 pound unsweetened cocoa powder
  • 2 tablespoons baking powder
  • 2 tablespoons ground cinnamon
  • 3 cups white sugar
  • 1.5 cups shortening
  • 6 eggs
  • 1 (6 ounce) can evaporated milk
  • 1 cup confectioners' sugar
  • 0.25 teaspoon almond extract
  • 1 tablespoon water, or as needed
Instructions:
  • - Preheat your oven to a toasty 375 degrees F (190 degrees C). - Lay out the almonds on a baking sheet.
  • Bake almonds in the oven until golden and aromatic, for about 5 to 10 minutes. Once done, cool slightly, then chop them up.
  • Sift the flour twice. Combine cocoa powder, baking powder, cinnamon, and salt with the flour in a bowl. In a separate bowl, use an electric mixer to beat together white sugar, shortening, and eggs until smooth and creamy.
  • Combine the creamy mixture with the flour mixture. Add almonds, evaporated milk, and vanilla extract to the bowl, then mix thoroughly by hand or with a large spoon until the dough comes together and becomes smooth. Shape the dough into 1-inch balls and place them on a baking sheet.
  • Bake until the bottoms are lightly browned, around 10 minutes. Then, cool the cookies on a wire rack until completely cooled.
  • Mix confectioners' sugar and almond extract until smooth, then add water to achieve desired thin consistency. Dip cookies in frosting and transfer to a wire rack to set.
