Chef John's 6-ingredient gelato is a creamy delight, elevated with a drizzle of extra-virgin olive oil and a sprinkle of sea salt for a luxurious finish.
Ingredients:
  • 2 cups whole milk
  • 0.66666668653488 cup white sugar
  • 1 tablespoon white sugar
  • 5 egg yolks
  • 1 cup heavy cream
  • 0.125 teaspoon kosher salt
Instructions:
  • Begin by gently pouring milk into a saucepan. Add 2/3 cup plus 1 tablespoon sugar and egg yolks, then whisk vigorously until well combined. Cook the mixture over medium heat, stirring gently with a spatula, until it turns into a steaming-hot custard that coats the back of a spoon, which should take about 10 minutes. Finally, stir in heavy cream and salt, then promptly remove from heat.
  • Strain the custard through a fine mesh strainer and refrigerate until fully chilled, at least 8 hours or overnight.
  • Transfer the mixture into an ice cream maker and churn for approximately 20 minutes following the manufacturer's guidelines. Cover the top with plastic wrap, place a lid on top, and freeze until solid, for at least 4 hours.
