Ingredients:
  • 2.25 cups whole milk
  • 0.625 cup white sugar, divided
  • 0.33333334326744 cup heavy cream
  • 0.33333334326744 cup unsweetened cocoa powder
  • 0.66666668653488 cup chopped dark chocolate
  • 4 egg yolks
Instructions:
  • In a heavy saucepan, gently heat milk, 1/2 of the sugar, and cream until simmering and sugar is dissolved, about 5 minutes. Be cautious not to burn the milk. Remove saucepan from heat and stir in cocoa powder and dark chocolate. Let it cool slightly.
  • In a large bowl, vigorously beat together egg yolks and sugar until the mixture becomes thick and pale yellow. Gradually pour in about 1 cup of the slightly cooled chocolate mixture while whisking non-stop to prevent the eggs from cooking. Once combined, add the remaining chocolate mixture and transfer the mixture back to the saucepan over medium-low heat. Stir continuously until the mixture thickens enough to coat the back of a spoon, approximately 5 minutes.
  • Pour the custard through a sieve into a bowl and cover it with plastic wrap pressed directly onto the surface to prevent a skin from forming. Chill in the refrigerator for 8 hours or overnight.
  • Pour the chilled custard into an ice cream maker and freeze for approximately 20 minutes following the manufacturer's guidelines. Once ready, transfer the ice cream to a sealed container and freeze for about 1 hour until it's fully set.
