Zesty grilled shrimp mixed with veggies in Italian dressing, served on crisp romaine lettuce for a refreshing salad.
Ingredients:
  • 1 pound uncooked medium shrimp, peeled and deveined
  • 0.5 cup Italian-style salad dressing
  • 0.5 cup lime juice
  • 2 medium red bell peppers, chopped
  • 1 medium onion, finely chopped
  • 1 stalk celery, chopped
  • 1 tablespoon chopped fresh cilantro
  • 1 pound romaine lettuce, torn
Instructions:
  • Heat up your outdoor grill until it reaches a medium-high temperature and lightly grease the grate.
  • Grill shrimp until they turn bright pink and the flesh is opaque, about 2 minutes per side. Allow them to cool for 10 minutes before transferring to a non-metal bowl.
  • Drizzle Italian dressing and lime juice over chilled shrimp, toss to evenly coat. Mix in red bell peppers, onion, celery, and cilantro gently. Chill covered in refrigerator for 1 hour.
