Italian layered dip: Cheese, beans, pepperoni, peppers in 25 mins. Serve with crackers.
Ingredients:
  • 1 (15.5-oz.) can great northern beans, drained, rinsed
  • 1 oz. (1/4 cup) shredded fresh Parmesan cheese
  • 1/4 cup purchased Caesar salad dressing
  • 1 cup finely chopped pepperoni (about 4 oz.)
  • 1/2 cup chopped drained pepperoncini peppers
  • 3 oz. (3/4 cup) finely shredded Italian cheese blend
  • 1 tablespoon chopped fresh oregano
  • 40 crisp crackers
Instructions:
  • Combine the beans, Parmesan cheese, and salad dressing in a food processor with the metal blade and blend until smooth. Then, spread the mixture into a 9-inch microwave-safe pie pan or quiche dish without greasing it.
  • Add savory pepperoni, tangy pepperoncini peppers, a generous sprinkle of shredded Italian cheese blend, and fragrant oregano on top. Seal the dish with microwave-safe plastic wrap.
  • Microwave on HIGH for 1 1/2 to 2 minutes, flipping pan halfway through. Serve with crunchy crackers.
