Layered Italian Dip with Crisp Wontons

Mediterranean-inspired appetizers with a tasty twist.
Ingredients:
  • 14 wonton skins (about 3 1/4-inch square)
  • Cooking spray
  • 1 can (15.5 oz) great northern beans, drained, rinsed
  • 1/4 cup shredded fresh Parmesan cheese
  • 1/4 cup Caesar dressing
  • 1 cup finely chopped pepperoni (about 4 oz)
  • 1/2 cup chopped drained pepperoncini peppers (bottled Italian peppers)
  • 3/4 cup finely shredded Italian cheese blend (3 oz)
  • 1 tablespoon chopped fresh oregano leaves
Instructions:
  • Preheat your oven to 400°F. Carefully slice each wonton skin in half to create 2 triangles. Place the wonton triangles in a single layer on 2 large ungreased cookie sheets. Lightly spray the wontons with cooking spray. Bake for around 6 minutes until they are perfectly crisp. Let them cool before enjoying.
  • Add beans, Parmesan cheese, and dressing to a food processor. Blend until smooth. Spread the mixture evenly in a 9-inch ungreased microwavable pie plate or quiche dish.
  • Layer pepperoni, pepperoncini peppers, cheese blend, and oregano on top. Seal with microwavable plastic wrap.
  • Microwave on High for 1 1/2 to 2 minutes, remembering to flip the pan halfway through. Enjoy with crispy wontons.
