Italian-style potatoes sautéed with onions, garlic, and olives for a delicious, simple side dish.
Ingredients:
  • 4 russet potatoes, scrubbed
  • 3 tablespoons olive oil, divided, or as needed
  • 2 teaspoons salted butter, or to taste
  • 1 medium onion, sliced
  • 3 cloves garlic, minced
  • salt and ground black pepper to taste
  • 0.5 cup pitted Kalamata olives, halved
  • 1 tablespoon minced fresh parsley, or to taste
Instructions:
  • Preheat the oven to 350°F (175°C) for a perfect bake.
  • Pierce the potatoes with a fork and microwave for 9 minutes until tender. Allow them to cool for about 10 minutes before slicing into wedges.
  • In a small pan over medium-low heat, combine 1 tablespoon of oil and butter. Sauté onion and garlic with salt and pepper until tender and sweet, about 5 to 7 minutes. Remove from heat.
  • Heat a generous amount of oil in a spacious nonstick pan over medium-high heat. Sear potatoes in batches, ensuring they have enough space in the pan. Gently flip until golden and crispy, for about 7 to 10 minutes. Keep the first batch warm in the heated oven while you finish the second batch.
  • Incorporate olives into the second batch and sauté for 1 minute. Introduce roasted potatoes and onion-garlic blend. Stir in the pan until everything is warm. Drain on paper towels and garnish with parsley, salt, and pepper.
