Crispy pignoli cookies, rolled in corn flakes for a classic Italian taste.
Ingredients:
  • 1 cup pine nuts
  • 11 tablespoons unsalted butter, at room temperature
  • 3 large eggs
  • 2.5 cups all-purpose flour
  • 1 teaspoon baking powder, or as needed
  • 4 cups crushed corn flakes
  • 1 tablespoon confectioners' sugar, or as needed
Instructions:
  • Preheat your oven to a toasty 350 degrees F (175 degrees C) and prepare 2 large baking sheets with parchment paper.
  • Toast pine nuts in a skillet over medium heat until golden and aromatic, stirring occasionally, for about 5 minutes.
  • Cream butter and white sugar in a large bowl using an electric mixer until creamy. Add eggs one at a time, mixing well after each addition. Combine flour and baking powder in a separate bowl, then gently stir into the butter mixture until just combined. Fold in pine nuts.
  • Coat dough balls in corn flakes by rolling them gently in a shallow baking dish. Place cookies 1-inch apart on baking sheets.
  • Bake in the preheated oven for about 23 minutes until golden brown. Let the cookies cool on the baking sheets, then dust with confectioners' sugar.
