Irresistible pine nut cookies disappear quickly, must hide some for yourself.
Ingredients:
  • 0.5 pound almond paste
  • 1 cup white sugar
  • 2 egg whites
  • 0.25 cup pine nuts
Instructions:
  • Break up the almond paste into a granulated form using a pastry chopper or food processor. Transfer it to a mixing bowl and slowly incorporate the sugar.
  • In a separate small bowl, whisk the egg whites until stiff peaks form. Gently fold the fluffy egg whites into the sugar-almond paste mixture.
  • Drop a spoonful of the mixture onto a greased and floured cookie sheet, then gently press pine nuts onto the top of the cookie to cover it completely.
  • Bake at 325 degrees F (170 degrees C) for 10-12 minutes, then cool on a wire rack.
