Italian Pork Chop Sheet-Pan Dinner

Italian-style pork chops with potatoes, green beans, and tomatoes cooked together for a simple and delicious meal.
Ingredients:
  • 5 tablespoons butter, melted
  • 1 tablespoon finely chopped garlic
  • 1 tablespoon Italian seasoning
  • 1 1/4 teaspoons salt
  • 4 bone-in pork loin chops (1 1/2 lb)
  • 2 russet potatoes, unpeeled, cut into 1-inch pieces (1 lb)
  • 1/2 cup Progresso™ Panko Italian style crispy bread crumbs
  • 1/4 cup shredded Parmesan cheese
  • 1 cup cherry tomatoes
  • 1/2 lb green beans, trimmed
  • 1/4 cup thinly sliced fresh basil leaves
Instructions:
  • Preheat the oven to 425°F and generously coat a 18x13-inch rimmed sheet pan with cooking spray.
  • Combine the melted butter, garlic, Italian seasoning, and 1 teaspoon of salt in a large bowl. Set aside 2 tablespoons of the mixture. Toss the pork chops in the reserved mixture in a separate bowl, then cover and refrigerate. Add potatoes to the remaining mixture in the large bowl and toss to coat. Spread the potato mixture in a pan and roast for 25 to 30 minutes, stirring once, until tender.
  • In a medium bowl, combine the remaining 1 tablespoon of melted butter with the bread crumbs and Parmesan cheese; set aside.
  • Place the pork on top of the potatoes in the pan. Sprinkle the bread crumb mixture over the pork and press gently to make it stick. Add the tomatoes and green beans to the pan, then sprinkle the vegetables with the remaining 1/4 teaspoon of salt. Roast for 12 to 18 minutes until the pork is cooked through, reaching 145°F, and the potatoes are crispy and tender. Finish by topping everything with fresh basil for a burst of flavor.
