Ingredients:
  • 1 kg purple or Desirée potatoes peeled and halved
  • sea salt
  • freshly ground black pepper
  • 4 higher-welfare pork chops skin removed but kept
  • extra virgin olive oil
  • 1 small handful fresh thyme leaves picked
  • 1 teaspoon fennel seeds
  • 10 bay leaves
  • 285 ml cider
  • 1 tablespoon wholegrain mustard
  • 4 tablespoons low fat crème fraîche
  • 1 knob butter
Instructions:
  • Preheat oven to 200°C/400°F/gas 6. Parboil potatoes in salted water for 15 minutes until tender, then drain. Score pork skin, season, and place in a hot roasting tray with olive oil. Add potatoes and thyme, ensuring crackling is on top. Roast for 15 minutes until cooked. Pound fennel seeds and bay leaves with salt in a pestle and mortar. Pat pork chops with oil, season with herb salt, and grill on a hot griddle pan for 3-4 minutes per side. Let rest for 4 minutes. Make cider mustard sauce in a pan, simmer until thickened, then add butter. Season and serve with potatoes, pork, crackling, and sauce. Enjoy with a green salad and cider.
