Italian potato & pasta soup

Savory Italian soup with chunky potatoes, smoky bacon, and orecchiette pasta.
Ingredients:
  • 1 leek, thinly sliced
  • 9.20 gm olive oil
  • 500g sebago potatoes, peeled, coarsely chopped
  • 1L chicken style liquid stock
  • 250g rindless smoked bacon
  • 400g can diced tomato
  • 2 bay leaves
  • 125.00 ml orecchiette pasta
  • 250.00 gm water
  • Pesto, to serve
  • Baby basil leaves, to serve
Instructions:
  • In a large saucepan, melt butter with olive oil over medium-high heat.
  • Sauté leek and bacon until softened. Stir in potatoes, canned tomato, stock, and bay leaves. Simmer partially covered until potatoes are soft, about 15 minutes.
  • Combine pasta and a generous cup of water in the pot to simmer for 25 minutes or until pasta is perfectly cooked. Season to taste and garnish with dollops of pesto and a sprinkle of fresh baby basil leaves.
