Italian sausage pasta bake with roasted tomato sauce

Italian sausage and herbs tossed with pasta shells in a roasted tomato sauce, topped with gooey mozzarella and baked until golden and delicious.
Ingredients:
  • 250g large dried pasta shells
  • 9.20 gm olive oil
  • 375g beef sausage
  • 2/3 quantity Semi-roasted tomatoes (see related recipe)
  • 63.75 gm beef stock
  • 62.50 ml shredded fresh basil leaves
  • 150g mozzarella, cut into 1cm cubes
Instructions:
  • Preheat oven to 200°C/180°C fan-forced. Boil pasta in salted water per package instructions until tender. Drain well.
  • Heat oil in a large frying pan over medium-high heat. Add sausages and cook for 10 minutes, turning occasionally, until browned. Transfer the sausages to a plate and thinly slice.
  • Combine the roasted tomato and stock in a food processor until smooth.
  • In a 6cm deep, 8-cup capacity ovenproof dish, layer the pasta, sausage, and basil. Spoon the tomato mixture over the top and sprinkle with cheese. Bake for 25 minutes until the cheese is melted and golden. Serve hot.
