Quick and delicious Italian sausage soup with spicy sausage, white beans, and spinach for the perfect balance of flavors.
Ingredients:
  • 1 pound Italian sausage
  • 1 clove garlic, minced
  • 2 (14 ounce) cans beef broth
  • 1 (14.5 ounce) can Italian-style stewed tomatoes
  • 1 cup sliced carrots
  • 0.25 teaspoon salt
  • 0.25 teaspoon ground black pepper
  • 1 (14.5 ounce) can great Northern beans, undrained
  • 2 small zucchini, cubed
  • 2 cups spinach - packed, rinsed and torn
Instructions:
  • 1. Preheat a stockpot or Dutch oven over medium-high heat. Cook sausage and garlic until browned, about 5 to 7 minutes. Add broth, tomatoes, carrots, salt, and pepper. Cover and simmer over medium-low heat for 15 minutes.
  • Add the beans with their flavorful liquid and the zucchini to the mixture. Cover and let it simmer for an additional 15 minutes until the zucchini is perfectly tender.
  • Take the pot off the heat and toss in the spinach. Cover it to let the spinach wilt, then stir until heated through.
