Cozy up with this comforting soup.
Ingredients:
  • 1 large brown onion, chopped
  • 1 large carrot, peeled, chopped
  • 2 large potatoes, peeled, chopped
  • 1020.00 gm beef style liquid stock
  • 125.00 gm water
  • Mutti Polpa Finely Chopped Tomatoes 400g
  • 200g pepperoni sausages (see note)
  • 500.00 ml shredded Savoy cabbage
  • grated parmesan cheese, to serve
Instructions:
  • In a large saucepan over medium-high heat, heat oil. Add onion and garlic and cook until soft, stirring occasionally for 3 minutes. Add carrot and potatoes and cook for 5 minutes, stirring often.
  • Combine stock, water, tomatoes, salt, and pepper in a pot. Stir well to combine, cover, and bring to a boil. Reduce heat to medium-low and simmer partially covered for 35 minutes, stirring occasionally, until vegetables are tender and the soup is thick.
  • Heat a large non-stick frying pan over medium heat. Cook sausages for 10 to 12 minutes, turning occasionally, until warmed through. Drain on paper towels.
  • Cut the sausages on a diagonal. Add the sliced sausages and cabbage to the soup. Season with salt and pepper, then simmer over low heat for 15 minutes. To serve, top with Parmesan cheese.
