Delicious Italian tortellini soup with sweet sausage, garlic, tomatoes, red wine - a flavorful blend of classic flavors.
Ingredients:
  • 1 pound sweet Italian sausage, casings removed
  • 1 cup chopped onion
  • 5 cups beef broth
  • 4 large tomatoes - peeled, seeded and chopped
  • 1 (8 ounce) can tomato sauce
  • 1 cup thinly sliced carrots
  • 0.5 cup water
  • 0.5 cup red wine
  • 0.5 tablespoon packed fresh basil leaves
  • 0.5 teaspoon dried oregano
  • 1.5 cups sliced zucchini
  • 3 tablespoons chopped fresh parsley
  • 8 ounces fresh tortellini pasta
Instructions:
  • Brown and crumble sausage in a 5-quart Dutch oven over medium-high heat for 8 to 10 minutes. Transfer cooked sausage to paper towel-lined plate using a slotted spoon. Reserve 1 tablespoon of drippings in the pot by draining the excess grease.
  • Cook the onions and garlic in the flavorful drippings over medium heat until the onions turn translucent, about 3 to 4 minutes.
  • Combine beef broth, tomatoes, tomato sauce, carrots, water, wine, basil, oregano, and sausage in a pot. Bring to a boil, then simmer uncovered for 30 minutes.
  • Remove the layer of fat from the soup and gently mix in the zucchini and parsley. Let it simmer with the lid on for 30 minutes.
  • Add the tortellini and let it cook for the final 10 minutes.
  • Savor the dish while it's hot!
