Classic tortellini soup with sausage, spinach, and tomatoes - a comforting crowd favorite.
Ingredients:
  • 1 pound mild sausage, removed from casings
  • 1 medium onion, finely chopped
  • 6 cloves garlic, finely chopped
  • 1 (32 ounce) carton chicken broth
  • 1 (14 ounce) can chicken broth
  • 1 pound frozen cheese tortellini
  • 1 (14 ounce) can diced tomatoes
  • 1 (10 ounce) package fresh spinach, coarsely chopped
  • 10 leaves fresh basil, chopped
  • 0.5 teaspoon red pepper flakes, or to taste
  • 1 pinch salt and ground black pepper to taste
  • 0.5 cup grated Parmesan cheese, or as needed
Instructions:
  • In a large pot over medium-low heat, sauté sausage and onion until onion is soft and translucent, breaking up sausage as it cooks, for 5 to 7 minutes. Stir in garlic and cook for an additional 1 to 2 minutes.
  • Pour the flavorful chicken broth into the pot and bring it to a lively boil for about 5 minutes. Introduce the delicate tortellini and cook for an additional 5 minutes. Gently tip in the tomatoes with their juices, bring the mixture back to a boil, then lower the heat and let the soup simmer for 10 minutes until all the flavors meld together beautifully.
  • Incorporate spinach into soup; although it may seem excessive, it will quickly wilt. Stir in basil and red pepper flakes, then simmer for an additional 5 minutes. Season with salt and pepper to taste.
  • Offer freshly grated Parmesan cheese for guests to sprinkle on top of their soup at the table.
