Italian sausages and beans

Ingredients:
  • 550g pork sausage
  • 2 baby fennel, thinly sliced
  • 2 garlic cloves, crushed
  • 1 large red capsicum, thinly sliced
  • 425g can diced tomatoes
  • 400g can borlotti beans, drained, rinsed
  • 125.00 ml chopped fresh basil leaves
  • Crusty bread, to serve
  • Small fresh basil leaves, to serve
Instructions:
  • Heat a non-stick pan over medium-high heat. Sear sausages for 4 to 5 minutes until golden brown, turning occasionally. Remove from heat and slice each sausage in half lengthwise.
  • In a pan over medium-high heat, warm up some oil. Sauté fennel and garlic until soft, for about 3 to 4 minutes. Mix in capsicum, tomato, beans, sausages, and 1/2 cup of cold water. Bring to a boil, then let it simmer on low for 15 minutes until sausages are cooked through and the sauce thickens.
  • Sprinkle in chopped basil and gently mix. Finish with fresh basil leaves. Serve alongside some crusty bread.
