Pasta e fagioli (pasta and beans)

Whip up a quick and delicious pasta and beans combo with minimal ingredients for a satisfying meal.
Ingredients:
  • 1 onion, finely chopped
  • 2 garlic cloves, finely chopped
  • 2 pork and fennel sausages or regular good-quality pork sausages, casings removed
  • 400g can chopped tomatoes
  • 3 sage leaves, chopped, or 1/2 tsp dried sage
  • 125ml beef stock
  • 400g can cannellini beans, rinsed, drained
  • 250g ditalini (see note) or macaroni
  • Toasted crusty bread, to serve
  • Grated parmesan, to serve
Instructions:
  • In a large pan over medium heat, sauté onion in oil until softened. Stir in garlic, then add sausage meat and cook until browned, breaking up any lumps. Mix in tomato paste, chopped tomato, sage, and stock. Simmer until slightly thickened, about 8-10 minutes. Stir in beans and let cool slightly before serving.
  • Cook the pasta according to package directions until al dente, then drain.
  • Blend 1 cup of the chilled sauce until smooth in a blender. Pour it back into the pan with the rest of the sauce and heat over low heat for 2-3 minutes. Add the pasta, then spoon the mixture over toasted bread slices, sprinkle with Parmesan, and enjoy!
