Italian pasta and cannellini bean soup in tomato broth, best served with garlic bread for a cozy and satisfying meal.
Ingredients:
  • 1 medium onion, chopped
  • 2 stalks celery, chopped
  • 3 cloves garlic, minced
  • 2 teaspoons dried parsley
  • 1 teaspoon Italian seasoning
  • 0.25 teaspoon crushed red pepper flakes
  • salt to taste
  • 1 (14.5 ounce) can chicken broth
  • 2 medium tomatoes, peeled and chopped
  • 1 (8 ounce) can tomato sauce
  • 0.5 cup ditalini or other small pasta
  • 1 (15 ounce) can cannellini beans, with liquid
Instructions:
  • Collect all the ingredients.
  • In a large saucepan over medium heat, sauté onion, celery, garlic, parsley, Italian seasoning, red pepper flakes, and salt until onion is translucent, approximately 5 minutes.
  • Combine chicken broth, tomato sauce, and tomatoes in the pot. Lower the heat and let it simmer gently for 15 to 20 minutes.
  • Cook pasta until perfectly al dente, approximately 10 minutes.
  • Add the beans with their flavorful juices and simmer for 3 to 4 minutes until warm.
  • Savor while hot!
