Unique and crispy fried ravioli cookies with a creamy chickpea and chocolate filling - a creative and delicious treat!
Ingredients:
  • 4 (1 ounce) squares semisweet chocolate
  • 1 (1 ounce) square unsweetened chocolate
  • 2 cups shortening for frying
  • 1 cup garbanzo beans, drained and pureed
  • 1 cup white sugar
  • 1 teaspoon ground cinnamon
  • 0.25 cup pureed dates
  • 0.75 cup ground walnuts
  • 3 eggs
  • 0.25 cup melted shortening
  • 2.5 cups all-purpose flour
  • 0.25 cup white sugar
  • 0.25 teaspoon salt
  • 0.33333334326744 cup confectioners' sugar for dusting
Instructions:
  • First, combine the semisweet chocolate and unsweetened chocolate in a double boiler or microwave-safe bowl until smooth. Allow the mixture to cool. Next, heat the 2 cups of shortening in a large, heavy skillet or deep fryer.
  • Combine pureed garbanzo beans, sugar, and cinnamon in a small bowl. Add dates and nuts, then mix in the cooled chocolate. Refrigerate while preparing the dough.
  • Beat the eggs in a medium bowl until fluffy. Stir in the 1/4 cup melted shortening. Then sift together the flour, sugar, and salt, and gently fold into the egg mixture. Add more flour if needed to make the dough easier to handle.
  • Roll out the dough to 1/8 inch thickness on a floured surface. Cut into 3-inch circles using a cookie cutter or a large drinking glass. Add 1 teaspoon of chocolate filling in the center of each circle, fold in half, and pinch to seal.
  • Deep fry cookies in hot oil until light brown, turning once. Remove with a slotted spoon and drain on paper towels. Once cooled, refrigerate and sprinkle with confectioners' sugar before serving.
