Italian Tomato Soup with Pesto-Cheese Toasts

Quick and delicious Italian tomato soup paired with flavorful broiled pesto cheese toast. Ready in just 15 minutes!
Ingredients:
  • 1 cup water
  • 2 cans (14 oz each) Muir Glen™ organic diced tomatoes with Italian herbs, undrained
  • 1 can (11.5 oz) tomato juice
  • 4 slices rosemary, Italian or French bread, 1/2 inch thick
  • 2 tablespoons basil pesto
  • 2 tablespoons shredded Parmesan cheese
Instructions:
  • Bring water, tomatoes, and tomato juice to a boil in a 3-quart saucepan.
  • Preheat broiler. Arrange bread slices on a baking sheet. Slather with pesto and top with cheese. Broil 4 to 6 inches from heat for 1 to 2 minutes until bread edges are golden brown.
  • Ladle the soup into four bowls and garnish each serving with a slice of bread.
