Italian Tortellini Salad

Delicious all-year Italian tortellini salad, perfect for picnics, potlucks, or BBQs. Makes 6 main course servings or 8 sides.
Ingredients:
  • 20 ounces refrigerated cheese tortellini
  • 1 1/2 cups halved cherry tomatoes
  • 3/4 cup halved fresh small mozzarella balls
  • 1 English cucumber, sliced and halved
  • 3/4 cup diced red or yellow bell pepper
  • 1 (5 ounce) package mini pepperoni
  • 1/2 cup roughly-chopped banana pepper rings
  • 1/2 cup diced red onion
  • 1/2 cup sliced black olives
  • 2 tablespoons minced Italian parsley
  • salt and freshly-ground black pepper to taste
  • 1 cup light Italian salad dressing (store bought or homemade)
  • 1/3 cup grated Parmesan cheese
Instructions:
  • 1. Fill a large pot with lightly salted water and bring it to a rolling boil. Add tortellini and cook until they float to the top and the filling is hot, about 3 minutes. Do not overcook as they'll begin to unfold. Drain, cool, and transfer to a large bowl.
  • In a separate bowl, mix together tomatoes, mozzarella balls, cucumber, bell peppers, pepperoni, banana peppers, red onion, black olives, parsley, salt, and pepper, then toss with the tortellini.
  • Drizzle the vibrant Italian dressing over the fresh salad, gently mix until everything is beautifully coated. Chill for a minimum of 1 hour before savoring.
  • Just before serving, give it a final stir, sprinkle with grated Parmesan, and enjoy cold. Keep any leftovers fresh in a sealed container in the refrigerator.
