Delicious Italian Tortellini Salad with olives, pepperoni, cheese, and artichokes - perfect for picnics and potlucks!
Ingredients:
  • 1 (16 ounce) package refrigerated cheese tortellini
  • 1 (6.5 ounce) jar marinated artichoke hearts, drained and chopped
  • 6 ounces mozzarella cheese, diced
  • 4 ounces sliced pepperoni, quartered
  • 1 (2.25 ounce) can sliced black olives
  • 2 green onions, sliced
  • 0.33333334326744 cup extra-virgin olive oil
  • 1.5 tablespoons balsamic vinegar
  • 1.5 tablespoons distilled white vinegar
  • 1 teaspoon dried Italian herb seasoning
  • salt and black pepper to taste
Instructions:
  • To begin the salad, bring a large pot of lightly salted water to a vigorous boil. Add the tortellini and cook uncovered until they rise to the surface and the filling is heated through, approximately 3 minutes.
  • While the tortellini cooks, prepare the dressing by whisking together oil, both vinegars, Italian seasoning, salt, and pepper in a bowl.
  • Prepare the salad: Drain the tortellini, rinse under cold water, and drain once more. Place them in a large bowl with artichoke hearts, mozzarella, pepperoni, olives, and green onions. Pour the dressing over the salad, toss everything together until evenly coated. Refrigerate for a minimum of 2 hours before serving.
