Tortellini Salad with Tomatoes and Peas

Delicious vegetarian tortellini salad with peas, tomatoes, Parmesan cheese, chives, and parsley - ideal for gatherings.
Ingredients:
  • 3 (12 ounce) packages refrigerated cheese tortellini
  • 0.5 (10 ounce) package frozen peas
  • 3 tomatoes, chopped
  • 1 cup coarsely grated Parmesan cheese
  • 1 bunch fresh chives, chopped
  • 0.25 cup chopped fresh parsley
  • 6 tablespoons olive oil
  • 2 lemons, juiced
  • 1 tablespoon white sugar
  • 0.75 teaspoon salt
  • 0.125 teaspoon freshly ground black pepper
Instructions:
  • 1. Boil a large pot of slightly salted water. 2. Cook tortellini in the boiling water until al dente, for 8 to 10 minutes. 3. Drain and let it cool.
  • Boil a pot of water then quickly cook peas for 2 minutes. Drain and allow to cool before using.
  • Mix together the chilled tortellini, peas, tomatoes, Parmesan cheese, chives, and parsley in a bowl.
  • In a small bowl, mix together olive oil, lemon juice, sugar, salt, and pepper to create a tangy dressing. Drizzle the dressing over the tortellini salad and toss to combine. Chill in the refrigerator for a minimum of 2 hours. Adjust seasoning with salt and pepper before serving to perfection.
