Cheese Tortellini Salad

Delicious picnic salad with cheese tortellini, pepperoni, provolone, olives, artichoke hearts, and zesty Italian dressing.
Ingredients:
  • 3 (250 g) packages cheese tortellini
  • 0.5 pound pepperoni, chopped
  • 0.5 pound provolone cheese, chopped
  • 2 (6.5 ounce) jars marinated artichoke hearts, drained and chopped
  • 1 (6 ounce) can sliced black olives
  • 0.5 (8 ounce) bottle Italian-style salad dressing, or more to taste
  • 1 (.7 ounce) package dry Italian salad dressing mix (such as Good Seasons®)
  • ground black pepper to taste
Instructions:
  • 1. Boil a large pot of lightly salted water until it's bubbling vigorously. 2. Cook tortellini in the boiling water, stirring occasionally, until the pasta floats to the surface and the filling is hot, for about 6 to 8 minutes. 3. Drain the tortellini. 4. Rinse the cooked tortellini with cold water until they are completely cooled. 5. Drain again and transfer to a large bowl.
  • Mix together the pepperoni, provolone cheese, artichoke hearts, black olives, Italian-style salad dressing, dry Italian dressing mix, and black pepper with the tortellini. Drizzle with additional Italian dressing before serving, if desired.
