Jackfruit tacos seasoned with taco seasoning, topped with zesty mango slaw for a delicious vegetarian twist.
Ingredients:
  • 0.5 cup finely shredded green cabbage
  • 0.25 cup finely shredded red cabbage
  • 0.25 cup chopped fresh mango
  • 1 medium carrot, shredded
  • 1 medium jalapeño pepper, seeded and thinly sliced
  • 1.5 tablespoons mayonnaise
  • 0.5 medium lime, juiced
  • 1 (14 ounce) can green jackfruit in brine, drained
  • 1 tablespoon grapeseed oil
  • 0.25 teaspoon taco seasoning, or to taste
  • 3 (6 inch) corn tortillas, or more to taste
  • 1 tablespoon chopped fresh cilantro, or to taste
Instructions:
  • In a large mixing bowl, toss together green and red cabbage, juicy mango, crisp carrot, spicy jalapeño, creamy mayonnaise, and zesty lime juice until the veggies are evenly coated. Set aside.
  • Prepare tacos: Shred jackfruit flesh like pulled pork or chicken, removing seeds and pods.
  • In a sizzling cast iron skillet, swirl in some oil over medium heat. Toss in the shredded jackfruit and sprinkle in the taco seasoning. Stir and cook until the flavors meld beautifully, about 2 to 3 minutes.
  • Heat a second cast iron skillet over medium-high heat. Cook tortillas in batches for 15 to 30 seconds on each side.
  • Place a generous amount of the flavorful jackfruit mixture in the center of each tortilla, then layer on the vibrant slaw and fresh cilantro for a burst of delicious flavors and textures.
