Vegan jackfruit tacos with tangy chili-lime sauce, mimicking pulled pork texture.
Ingredients:
  • 2 (20 ounce) cans young green jackfruit packed in water, drained
  • 0.5 teaspoon paprika
  • 0.5 teaspoon black pepper
  • 0.25 teaspoon chili powder
  • 0.25 teaspoon ground cumin
  • 0.25 teaspoon salt
  • 1 large shallot, minced
  • 0.75 cup water
  • 0.25 cup orange juice
  • 1 medium lime, juiced
  • 1 chipotle pepper in adobo sauce, minced
  • 2 tablespoons maple syrup
  • 1 teaspoon dried oregano
  • 2 bay leaves
  • 8 (6 inch) corn tortillas, warmed
Instructions:
  • Combine jackfruit with garlic, paprika, onion powder, black pepper, chili powder, cumin, and salt in a large bowl. Use your hands to shred the jackfruit until it resembles pulled pork.
  • In a large pan over medium heat, saute shallot in oil until soft, about 2 to 3 minutes. Add seasoned jackfruit and cook together for 4 to 5 minutes, allowing it to stick a bit for flavor. Deglaze with water, ensuring to scrape up any delicious bits from the bottom of the pan.
  • Combine orange juice, lime juice, chipotle pepper, maple syrup, oregano, bay leaves, salt, and pepper in a pot. Stir well and simmer for 25 minutes, occasionally stirring and shredding the jackfruit. If there is excess liquid, drain it. Adjust seasoning with more salt or pepper if desired. Enjoy!
  • Assemble on freshly heated corn tortillas.
