Jalapeño Popper Grilled Cheese Sandwich

Spicy cream cheese, cheese, and tortilla chips elevate this grilled cheese to a gourmet jalapeño popper twist.
Ingredients:
  • 2 ounces cream cheese, softened
  • 1 tablespoon sour cream
  • 10 pickled jalapeno pepper slices, or to taste - chopped
  • 2 ciabatta sandwich rolls
  • 4 teaspoons butter
  • 8 tortilla chips, crushed
  • 0.5 cup shredded Colby-Monterey Jack cheese
Instructions:
  • Mix together the cream cheese, sour cream, and pickled jalapeno in a small bowl. Then, preheat a skillet over medium heat.
  • Cut each ciabatta roll in half horizontally. Remove the rounded tops to flatten them. Spread 1 teaspoon of butter on the cut side of the bottom half and another teaspoon on the flattened top half. Spread half of the cream cheese mixture, half of the crushed chips, and half of the shredded cheese on the bottom half of the bun. Place the top half of the bun on the sandwich and cook in a hot skillet. Repeat the process for the second sandwich.
  • Grill until both sides are golden brown, about 3 to 5 minutes per side, melting the cheese in the process.
