Jalapeno Lentil Burgers

Spicy jalapeno lentil burgers with a crispy exterior, served on a fluffy bun.
Ingredients:
  • 1.5 cups water
  • 0.75 cup dry lentils
  • 0.5 cup grated carrots
  • 0.33333334326744 cup finely chopped onion
  • 0.5 jalapeno pepper, finely chopped
  • 2 cloves garlic, finely chopped
  • 1.5 cups panko bread crumbs
  • 3 eggs, lightly beaten
  • 2 tablespoons olive oil
  • 0.5 teaspoon Italian seasoning
Instructions:
  • In a saucepan, bring water and lentils to a boil. Reduce heat, cover, and simmer for 15 minutes. Stir in carrots, onion, jalapeno pepper, and garlic; continue cooking until lentils are tender, about 15 minutes. Remove from heat and allow the lentil mixture to cool slightly before serving.
  • Preheat the oven to 400 degrees F (200 degrees C) and generously grease an oven-proof wire rack.
  • In a bowl, combine bread crumbs, eggs, olive oil, salt, and Italian seasoning. Add the lentil mixture and mix until fully incorporated. Shape the mixture into 6 to 8 patties and place them on a wire rack. Refrigerate for 15 minutes before proceeding.
  • Place the patties on a wire rack set on a baking sheet.
  • Simply bake the burgers in the preheated oven until they are firm, which should take around 20 minutes.
