Homemade jalapeño Hawaiian rolls - perfect for holiday feasts or paired with chili/soup. A delicious twist on a classic favorite from Betty Crocker Christmas Cookbook.
Ingredients:
  • 3 1/2 to 4 1/2 cups Gold Medal™ All Purpose Flour
  • 1/3 cup pineapple juice
  • 1/4 cup packed brown sugar
  • 1 teaspoon salt
  • 1 package (1/4-oz) regular active or fast-acting dry yeast (2 1/4 teaspoons)
  • 1/2 cup milk
  • 1/4 cup butter
  • 2 tablespoons water
  • 1 egg
  • 1 cup shredded cheddar or pepper Jack cheese (4 oz)
  • 1/2 cup chopped red bell pepper
  • 2 tablespoons chopped seeded jalapeño chiles (about 2 medium)
  • 1 tablespoon butter, melted
  • 1 tablespoon pineapple juice
Instructions:
  • Combine 2 cups flour, 1/3 cup pineapple juice, brown sugar, salt, and yeast in a large bowl. In a 1-quart saucepan, warm milk, 1/4 cup butter, and water until very warm (120°F to 130°F). Add this mixture along with egg to the flour in the bowl. Mix with an electric mixer on low speed for 1 minute, then on medium speed for an additional minute. Stir in cheese, bell pepper, chiles, and 1 1/2 to 2 1/2 cups flour gradually until dough is smooth and easy to handle.
  • Knead dough on lightly floured surface for 5 minutes until smooth and elastic, adding more flour as needed. Grease a large bowl with shortening or cooking spray. Place dough in the bowl, turning to coat all sides. Cover with plastic wrap and a dish towel, let it rise in a warm spot for about 1 hour until doubled in size.
  • Prepare the muffin cups by spraying them with cooking spray. Gently deflate the dough by pressing your fist into it. Divide the dough into 24 pieces. Shape each piece into a ball by using floured fingers to pull the edges under and seal by pinching. Place the balls, with the pinched sides down, into the muffin cups. Loosely cover and let the rolls rise in a warm place for about 30 minutes until they double in size.
  • Preheat the oven to 375°F and bake the uncovered rolls for 15 to 18 minutes until beautifully golden brown. Then, transfer the rolls from the pan to a cooling rack.
  • Mix together luxurious melted butter with a splash of sweet pineapple juice in a small bowl. Lightly brush this delightful mixture over the golden tops of the rolls. Enjoy these delectable rolls warm or at room temperature.
