Spicy lime cheesecake - Sweet with a hint of heat. Delicious twist!
Ingredients:
  • 2 cups graham cracker crumbs
  • 0.5 cup butter, melted
  • 3 (8 ounce) packages cream cheese, softened
  • 0.75 cup white sugar
  • 0.75 cup sour cream
  • 3 eggs at room temperature
  • 1 tablespoon all-purpose flour
  • 1 teaspoon vanilla extract
  • 0.5 cup fresh lime juice
  • 1 jalapeno pepper, seeded and minced
Instructions:
  • Heat your oven to 375 degrees F (190 degrees C).
  • Combine the graham cracker crumbs and butter in a large bowl, ensuring they are thoroughly moistened, then firmly press the mixture into the base of a 9-inch springform pan.
  • Bake the dish until the crust is lightly browned and fragrant, about 5 minutes in the preheated oven. Let it cool before serving.
  • Cream together the cream cheese, sugar, and sour cream using an electric mixer until fluffy. Add eggs one at a time, mixing well after each addition. Stir in flour, vanilla extract, and lime juice with the final egg. Gently fold in jalapeno pepper until evenly combined. Pour mixture into prepared crust.
  • Preheat the oven and bake for 15 minutes. Lower the oven temperature to 250 degrees F (120 degrees C) and bake until the center sets, for 50 to 55 minutes. After baking, run a paring knife around the edges, then cool the cheesecake at room temperature for 1 hour before transferring to the refrigerator to cool for 4 hours or overnight.
