Kick up game day with these quick and fiery bites.
Ingredients:
  • 12 jalapeno chillies
  • 100g manchego cheese, cut into 3cm batons
  • 20.00 gm rice flour
  • 130g (1 cup) tempura batter mix
  • 10.00 gm Mexican spice mix
  • 125ml (1/2 cup) water, iced
  • Vegetable oil, to deep-fry
  • Aioli, to serve
Instructions:
  • Slice the chillies in half lengthwise with a sharp knife, being careful to keep the stem end intact. Take out and discard the seeds. Stuff the chillies with cheese and lightly coat them with flour.
  • In a bowl, mix together the tempura batter mix and spice mix. Gradually whisk in water using a fork until a light and slightly lumpy batter forms.
  • Fill a small saucepan halfway with oil. Heat over high heat until it reaches 170 degrees. Coat chillies in batter, then deep-fry in batches for 1-2 minutes until golden. Drain, season, and serve with aioli.
